Lemon, Pine Nut and Almond Tea Cake


  • 125g Butter (I used stork as per usual)
  • 1/2 Cup of Caster Sugar
  • 3 Eggs
  • 1 tablespoon of Lemon rind - this isn't a limit feel free to add lots more!
  • 2 Tablespoons of Milk
  • 1 Cup/120g of Ground Almonds 
  •  1/4 Cup/35g of Self - Raising Flour
  • 2 Tablespoons Pine Nuts - again this isn't a limit 
  • 1 Tablespoons Flaked Almonds - again this isn't a limit


  1. Preheat the Oven to 180 Celsius/350 Fahrenheit.
  2. Grease or line with grease proof paper a loaf tin.
  3. Beat butter,sugar,eggs and lemon rind in a mixing box until light and fluffy - you may want to use an electric mixer.
  4.  Stir in milk, ground almonds and sifted flour.
  5. You may want to add some flaked almonds and pine nuts into the mixture but this is optional.
  6. Spread mixture into the loaf tin; smooth the surface.
  7. Sprinkle with remaining nuts.
  8. Bake Teacake for 35 minutes - check with baking skewer.
  9. Leave to cool.
  10. Serve warm or at room temperature.
