Marmalade Cake


Makes 8-10 slices
  • 100g of Butter
  • 75g of Caster Sugar
  • 2 Medium eggs, lightly beaten
  • 1-2 Teaspoons of Orange Zest
  • 150g Self-Raising Flour
  • 2 Tablespoons of Milk
  • 3 Tablespoons of Marmalade


  1. Preheat the oven to 180C, 350F, gas mark 4.Prepare an 18cm cake tin (Baking paper or grease it) 
  2. Cream the butter and sugar together in a bowl, beating until it is light, pale and fluffy. (Should take about 3-4 mins)
  3. Add the egg and continue to beat all the time.
  4. Stir in the marmalade and orange zest. Mix the flour into the cake mix (folding into the cake mix) followed by enough milk to make a thick batter consistency.
  5. Spoon into the prepared tin and bake for 30-35 minutes or until the top is golden brown and a knife inserted into the centre comes out clean.
  6. Allow the cake to cool for a couple of minutes in the tin, then turn out on to a rack to cool completely.


Use good marmalade! A Cheap one will not do! 
If you are unhappy with the presentation of your cake, dust a sprinkle of icing sugar over the top to create fairy feel and to hide any burnt patches!
