Mushroom Rice Pilaf


  • Assorted Mushrooms (I used Baby Button)
  • 1 Cup of Brown Rice
  • 2 Cups of Vegetable Stock
  • Handful of Thyme
  • 1 Cup of White Wine (optional)
  • 2 Shallot Onions (optional)


  1. Fry the mushrooms and shallots in a frying pan with a little olive oil
  2. Bring the vegetable stock to boil/ make with kettle
  3. Mix the rice and vegetable stock slowly in a saucepan
  4. Add the mushrooms and onions to the mixture
  5. Then gradually stir in the white wine
  6. Cook for around 35-40 minutes (or until rice is tender)
  7. Stir in the thyme and cook for another few minutes (I did for about 5 Min)
  8. Serve and enjoy
