Quinoa Veg bowls

A light meal packed with natural goodness, its gluten free and vegetarian.


  • 1/2 cup of uncooked Quinoa.
  • 1 cup of Veg Stock.
  • Half a broccoli 
  • 80g of sweetcorn 
  • 2 shallot onions


  1. In a saucepan/pot add the quinoa and 1 cup of veg stock. Bring this to the boil and the leave to simmer for 15 minutes.
  2. Whilst this is simmering boil or steam your broccoli. If appears to be drying up then simply add some additional water.
  3. Next dice the shallots and fry in olive oil for  5 minutes.
  4. Cover your sweet corn in water and lightly steam it  for 1-2 minutes  in microwave (as it is tinned sweetcorn it has already been cooked so all you are simply doing is warming it up).
  5. After this mix the vegetables and quinoa together in the pot/pan and cook for another 5 minutes.
  6. Then serve! However you may want to microwave the mixture if you want it hotter as it may have cooled down.
