Very Veggie Soup


  • ½ Leek
  • Broccoli florets
  • ½ White onion
  • Sliced Carrots
  • 2 Vegetable stock 
  • 1 Small potato


  1. Peel and prep the Vegetables whilst boiling 500ml of water, then dissolve the two stock cubes into the boiled water and stir.
  2. Next place the veggies in a large casserole dish/ slow cooker and pour over the stock mix. Depending on the size of your dish/ pot you may have to add more water so that all the veggies are covered ( I had to add another 500ml).
  3. Then leave to slowly cook for a couple of hours on a low heat (I left mine in the slow cooker for 5 hours)
  4. Finally with blender or hand mixer, blend the soup.  
  5. If you like a chunky thick soup then only blend for 10- 30 seconds but if you prefer a thinner soup then blend for 30 seconds - 1 minute.
  6. ENJOY!
