Cranberry and White Chocolate Biscuits

Delicious Biscuits loaded with chocolate and dried cranberries a wonderful combination for a afternoon treat. Also these cookies make a perfect Christmas present to someone you love.

  • 225g  Flour
  • 125g Butter
  • 100g Brown Sugar
  • 1 Egg
  • 100g of Dried Cranberries
  • 60g-100g of White Chocolate chips or 60g-100g of chopped white chocolate

  1. Preheat the Oven to 180 Celsius/350 Fahrenheit.
  2. Line two baking trays with greaseproof paper.
  3. Whisk Butter and Sugar together in a large bowl.
  4. Then add beaten egg.
  5. Slowly sift in the flour.
  6. Add Chocolate and Cranberries
  7. Finally roll out onto surface and cut using a cutter of your choice.
  8. Bake for around 10 minutes but this depends on your oven so I recommend checking the  appearance often after eight minutes to make sure they don't burn.

Notes and Recommended Products

These biscuits aren't as sweet as your typical cookies or sweetened shortbread so if you want more of a sweeter biscuit add another 50g or so.
I highly recommend Nestle Milky bar chocolate for these biscuits, I have tried cooking white chocolate before and the result isn't half as good or tasty! There isn't much of a price difference so trust me the few extra pence is worth it.
If you aren't keen on brown sugar feel free to replace the 100g with caster sugar instead, I use brown sugar because I the taste is less artificial.
Flour - McDougalls Premium Plain Flour
Butter - Stork
Chocolate - Nestle Milkybar
