Cherry and Almond Cake - UPDATED

One of my favourite cakes, I think almonds are a great flavour to pair with fruit. So with the sticky sweet cherries, flaked almonds, ground almonds and even whole almonds this cake is delicious.

Ingredients

  • 120g  Self Raising Flour 
  • 20g Ground Almonds
  • 125g Butter
  • 110g Caster Sugar
  • 3 Eggs
  • 100g-200g GlacĂ© cherries
  • 1 tsp of Almond Essence
  • 2 Tablespoons of Flaked almonds
  • 5-10 Whole almonds  


Directions


  1. Preheat the Oven to 180 Celsius/350 Fahrenheit.
  2. Cream the butter and sugar together, then slowly add the eggs one by one.(Mixing in between.)
  3. Mix in the ground almonds.
  4. When thoroughly combined, sift and then fold in the flour with a wooden spoon or spatula.
  5. Add half a teaspoon full of almond essence and mix.
  6. Separate your cherries into three piles - Bottom cherries, sponge cherries and decoration cherries. Keep the decoration cherries whole and put to one side.
  7. For the sponge cherries chop then into small pieces and coat them in flour. Then fold these into the mixture.
  8. Next for the bottom cherries, these ones you want to sink to the bottom. So cut a few of them in half and keep some whole then (in a bowl) pour over another half a teaspoon of almond essence, move the bowl around to ensure the cherries soak up the essence.Then mix them into the mixture.
  9. Mix in 1 tablespoon of flaked almonds and a few whole almonds.
  10. Spoon the mixture into your greased baked tin of choice, level the surface and sprinkle some flaked  almonds over the top.
  11. Bake for up to 30 minutes but I recommend you check its appearance every 5 minutes after 15 minutes.
  12. When baked it should be risen and golden brown.
  13. Leave to cool and then decorate, You wioll have some cherries, whole almonds and flaked almonds left to mess around with!
  14. Finally enjoy.


Notes and Recommended Products

Make sure your Glacé cherries are of a good quality, I used ones specifically made for baking.
To decorate my second version I used icing to stick the cherries onto the cake, it also gives the cake a sweeter taste.
