Apple Variation Cookies

My Grandparents neighbours are vegans and very earthy, they grow most of their own food and this year their apple tree shed more apples than they could physical enjoy. As they knew I loved baking, the couple kindly gave me around a dozen to see what I could come up with.
Eventually after much thought I decided to make cookies! But with what flavours to accompany the apple? Chocolate? Cinnamon? Nuts? Fruit?
So I have created a basic apple cookie dough which you can adapt and add to your liking!
Top - Apple and Rasin, Bottom left- Apple and Cinnamon, Bottom right- Apple and white chocolate


  • 200g  Plain Flour (plus extra for flouring)
  • 90g Butter
  • 100g Brown sugar 
  • 1 Egg
  • Sprinkle of white sugar 
  • Apples finely copped 


  1. Preheat the Oven to 170 Celsius or 150 Celsius if you have a fan oven. 
  2. Line a baking tray with baking paper.
  3. Cream together the sugar and butter with a free standing mixer or hand mixer
  4. Beat in the egg.
  5. Sieve the flour into the mixture
  6. Roll or cut into cookies and place on baking tray.
  7. Bake for 10-15 minutes  

Even my cat loves them!

My Variations

  • Apple and white chocolate - I used tons of milky bar buttons
  • Apple and cinnamon - 2 teaspoons of cinnamon
  • Apple and raisins -  Around 100g of raisins
