Honey and pine nut cake

A sweet but simple cake, perfect for natural flavour lovers and sweet tooth's. This honey cake goes perfect with a cup of tea and is a lovely treat.


  • 160g  Self raising flour
  • 125g Butter
  • 120g Brown sugar
  • 3 Eggs
  • 5 Tablespoons of honey
  • Pinch of ground almonds (around 1 teaspoon)

    • 5 Tablespoons of pine nuts


    1. Preheat the Oven to 160 Celsius (Fan oven) or 140 Celsius if you have a fan oven.
    2. Grease a cake tin with butter and cut a square of baking paper to go on the bottom of the tin.
    3. Whisk the butter and sugar together until light and fluffy with an electric mixer.
    4. Then slowly add the eggs, mixing each time, to avoid curdling.
    5. Add the pinch of ground almonds.
    6. Then sift the flour slowly into the bowl.
    7. With a spoon, gently fold in the flour until smooth.
    8. Next add the honey and whisk.
    9. Mix in a few pine nuts with a spoon.
    10. Pour mixture evenly into your tin choice, smoothing the top with a baking spatula.
    11. Finally sprinkle the remanding pine nut over the top of the cake.
    12. Bake for 30 - 40 minutes or until golden brown.
    13. Leave to cool for 10 minutes in the tin then take then turn out, leaving to cool for a further 10 mins.

      For flour McDougalls Self Raising Flour.
      When it comes to honey, any honey will do its really up to you! Whether you prefer organic honey from farmers markets or aldi's best it honestly does not matter.
