Orange and Almond Cake

Feeling brave? Feeling adventurous? Want new flavours? New combos? Surprise your guests with this usually combinated but delicious cake. The zest of the orange bursts through the sweetness of the cake and the almonds gives it the alternative flavour.


  • 140g  Self Raising Flour 
  • 20g Ground Almonds
  • 130g Butter
  • 120g Caster Sugar
  • 3 Eggs
  • 2 Large oranges - juice and zest
  • 1 Teaspoon of Almond Essence
  • 1 Tablespoon of Flaked almonds
  • Flaked and whole almonds for decoration
  • Icing sugar & butter for frosting.  


  1. Preheat the Oven to 180 Celsius/350 Fahrenheit.
  2. Cream the butter and sugar together, then slowly add the eggs one by one.(Mixing in between).
  3. Grate 1 orange and set this zest to one side, then cut this orange in half and squeeze the juice into the mixture. Be careful of the orange pips falling in as well. 
  4. Mix in the ground almonds.
  5. When thoroughly combined, sift and then fold in the flour with a wooden spoon or spatula.
  6. Add almond essence and 3/4 of the orange zest and mix.
  7. Mix in 1 tablespoon of flaked almonds and squeeze the other half of the orange, adding the juice to your cake mixture.
  8. Spoon the mixture into your greased baked tin of choice, level the surface and sprinkle some flaked almonds over the top.
  9. Bake for up to 30 minutes but I recommend you check its appearance every 5 minutes after 15 minutes.
  10. When baked it should be risen and golden brown.
  11. Whilst the cake is in the oven cut the other orange in half and make your butter icing with 50g of butter, plenty of icing sugar and orange juice. Place this in the fridge to harden (Remember to taste try)
  12. When the cake has been taken out of the oven & whilst it is still slightly warm, squeeze the other half of the orange onto the cake, Then sprinkle some of orange zest.
  13. After the cake has cooled, spread the orange butter cream on to the cake and decorate with your almond, left over orange zest and any other things that may take your fancy!
  14. Finally enjoy.

 Notes and Recommend Products

Always squeeze the juice out of oranges yourself instead of using carton orange juice. 

Always taste try the icing as this will give you an indication of how much more butter/orange/icing sugar you need.

You could always crystallise the orange peel for the top of the cake for decoration to improve its appearance or buy candied orange sweets.
