Edamame Soybeans, Apples, Sugar Snap Peas & Coriander

I often buy this one as an alternative to marks and spencers hearty grain salads. 
It is a small plant based salad meaning it would not be suitable on its own as a lunch. But the flavours are to die for, it is very refreshing and the chunks of apple add a wonderful sweet crunch. The courgettes are spiralized into ribbons and the sugar snaps are chopped into little pieces which both work well with the edamame beans. The coriander is very strong therefore you could eat it without the dressing. However the dressing is lovely despite its funky looking colour. 
It also contains pumpkin seeds giving it a slightly chewy texture as well.

This salad pot contains: cucumber, edamame soy bans, apples, broccoli, courgette, sugar snap peas, peas, toasted pumpkin seeds, spinach, coriander, apple and soy dressing contains concentrated apple juice, lime juice, rice vinegar, ginger puree, spinach, mint infused sunflower oil, tamari soy sauce, salt, lime leaves, cornflour, mint, black mustard seeds, garlic puree, vinegar, ground black pepper, rapeseed oil.
