 Cauliflower & Harissa Spiced Chickpea Salad

Please note - This salad is vegan but contains a non vegan dressing which is separate therefore you can chose not to use it, it is also mild in terms of chilli.

I have always been a bit apprehensive about choosing this particular pot as the chilli symbol and dressing put me off. However the great thing about it is that the dressing is separate and although it may be considered as a waste, I happily ate it without it.
It is a perfect salad for those who are looking for a lower in carbohydrates or fat lunch. It also makes a lovely accompaniment to hummus and pitta for those who like a bit more.
I did not find it spicy at all, although there is a little heat from the spiced chickpeas and trust me, I am such a wuss with spicy food!

The cauliflower is an interesting combination with the quinoa, but it works well and lowers the grain and fat content. The tomatoes and cucumber were surprisingly still crunchy and along with the pomegranate seeds, it had a refreshing taste combined with the spices.
The pomegranate seeds also gave it a very subtle sweet taste, which I loved.
It contains fennel and coriander which work really well together adding a flavour that is similar to anise.

This salad pot contains; cauliflower,  cooked quinoa, tomatoes, cucumber, fennel, chickpeas, pomegranate seeds, coriander, mint,ground paprika, ground cumin, chilli infused sunflower oil, salt, ground caraway seeds, ground coriander, ground ginger, sugar, ground cayenne pepper. 
Please note the feta and int dressing contains ingredients such as milk, dried egg, egg and cheese.
