Cumin Cauliflower salad with Crunchy Apple

This is unusual salad will surprise your friends and family, the flavours are a strange combination but work wonderfully together.

Cauliflower is typically not eaten cold as it quite an unpopular vegetable, in fact, all the UK seems to think it's good for cauliflower cheese, which is quite laughable really. A lot of people turn cauliflower into mush which puts a lot of people off the cancer-fighting vegetable.
It contains sulforaphane, a sulphur compound that has been shown to kill cancer stem cells and slow tumour down growth.

(Serves 4 - as a side)
  • 1 Cauliflower head
  • 1 Apple
  • Two Tablespoons of Ground Cumin 
  • 100G of Curly Kale 
  • 100G of Spinach 

I would recommend that you used a highly flavoured and tangy apple, not a cooking apple. I like jazz apples the most, but a Lord Lambourne, Pink Lady, Braeburn or Gala should do fine. 

  1. First of boil or steam the cauliflower, for around minutes. I prefer to steam mine in the microwave. Then leave to cool.
  2. Meanwhile, chop the apple and wash the kale and spinach.
  3. Throw all the cauliflower, apple, kale and half the spinach together in a bowl and scatter the cumin over the top before stirring in. 
  4. Using a casserole dish, spread the rest of the spinach over the bottom (almost like a bed).
  5. Finally, tip the cumin coated ingredients over the bed of spinach.
